These are very old vines planted on sandy-calcareous soils and cultivated using traditional and artisan methods. There is no irrigation, no mechanisation and no chemical treatments. Only organic and environmentally friendly treatments are used

The Esencia Rural Pampaneo Ancestral grapes are destemmed and then macerated, producing only a yeast cap, spontaneous fermentation takes place with native yeasts. Before the end of the process, it is bottled to allow the carbon dioxide to develop. Finally, the sparkling wine is sold without disgorging
